This not-too-sweet strawberry purée is perfect for just about anything, including cheesecake! We especially enjoy it on our Keylime Cheesecake. Things you'll need
Small/medium saucepan (A nice saucepan is a handy addition to any kitchen. Here is a great article on how to pick out an excellent saucepan.)
Wood or metal stirring spoon (remember you shouldn't use metal utensils with non-stick cookware) Rubber spatula, very handy for scraping sticky sauces out of pots and blenders! Blender or Food Processor
Glass jar, squeeze bottle (for decorating), or other storage container
Ingredients
16oz fresh strawberries
2 tablespoon sugar
1 teaspoon fresh squeezed lemon juice
1/2 teaspoon real vanilla extract
Preparation
Wash, rinse, and chop strawberries in to large pieces.
Add strawberries and sugar to saucepan.
Cook over medium heat, bring to a slow boil. Stir continuously to avoid scalding. Reduce heat and simmer for 2-4 minutes, continue stirring.
Reduce heat and simmer for 2 minutes, continue stirring.
Remove from heat and allow to cool for 5-10 minutes.
Add mixture to blender.
Add lemon juice and vanilla.
Purée until desired consistency.
Pour into airtight container for storage. Keep refrigerated.
